Ingredients for cheesecake
  • 910g room temperature cream cheese

  • 200g sugar

  • 160g sour cream

  • 1 ½ teaspoons vanilla extract

  2. Mix sugar, brown or white sugar and digestive biscuits crumbs

  3. Add melted butter and use a fork to combine ingredients well

  4. Pour crumbs into a pan and press firmly into the bottom and up the sides of the pan. Set aside.

  5. In the bowl of a stand mixer, add cream cheese and stir until smooth and creamy

  6. Add sugar and stir again until creamy

  8. With the mixer on low speed, gradually add lightly beaten eggs

  14. Cool another 1-2 hours or until near room temperature before transferring to the refrigerator and allowing to cool overnight or at least 6 hours. Enjoy!
