Ingredients for cheesecake
  • 910g room temperature cream cheese

  • 200g sugar

  • 160g sour cream

  • 1 ½ teaspoons vanilla extract

  • ⅛ teaspoon salt

  • 4 large eggs room temperature, lightly beaten

  1. Preheat the oven to 160 degree celsius

  2. Mix sugar, brown or white sugar and digestive biscuits crumbs

  3. Add melted butter and use a fork to combine ingredients well

  4. Pour crumbs into a pan and press firmly into the bottom and up the sides of the pan. Set aside.

  5. In the bowl of a stand mixer, add cream cheese and stir until smooth and creamy

  6. Add sugar and stir again until creamy

  7. Add sour cream, vanilla extract, and salt, and stir until well-combined.

  8. With the mixer on low speed, gradually add lightly beaten eggs

  9. Use a spatula to scrape the sides and bottom of the bowl again and make sure all ingredients are well combined

  11. Bake on 160 degree celsius for about 75 minutes.

  12. Remove from the oven and let it cool on top of the oven for 10 minutes.
