Ingredients for crust

170g graham cracker or digestive biscuits crumbs

2 Tablespoons sugar

1 Tablespoon white or brown sugar

7 Tablespoons melted butter
Ingredients for cheesecake

910g room temperature cream cheese

200g sugar
-
160g sour cream
-
1 ½ teaspoons vanilla extract

⅛ teaspoon salt

4 large eggs room temperature, lightly beaten
Instructions:

Preheat the oven to 160 degree celsius

Mix sugar, brown or white sugar and digestive biscuits crumbs

Add melted butter and use a fork to combine ingredients well

Pour crumbs into a pan and press firmly into the bottom and up the sides of the pan. Set aside.

In the bowl of a stand mixer, add cream cheese and stir until smooth and creamy

Add sugar and stir again until creamy
-
Add sour cream, vanilla extract, and salt, and stir until well-combined.

With the mixer on low speed, gradually add lightly beaten eggs

Use a spatula to scrape the sides and bottom of the bowl again and make sure all ingredients are well combined

Pour cheesecake batter into a prepared pan. To insure against leaks, place the pan on a cookie sheet that’s been lined with foil.

Bake on 160 degree celsius for about 75 minutes.

Remove from the oven and let it cool on top of the oven for 10 minutes.

Use a knife to gently loosen the crust from the inside the pan

Cool another 1-2 hours or until near room temperature before transferring to the refrigerator and allowing to cool overnight or at least 6 hours. Enjoy!
